USDA Certified and Custom Whole, Half, and Quarter Beef Shares

Big Summit Beef cattle are 100% raised and finished on native grasses grown on pastures in Central Oregon. No hormones or antibiotics are ever added!  Our cattle are custom processed in the fall after they are raised low stress and fattened naturally in the summer months on the highest quality native forages.

We are now taking orders for the Fall of 2024!

To Place an Order, Here’s How it Works:

1. Reserve your beef with Big Summit Beef. Fill out the online form below and send us your deposit. Big Summit Beef Co will confirm by email or phone they received your deposit and order form. Big Summit Beef Co will notify you once your beef has gone to the processor and final payment is due. Our customers generally place orders in the spring (beef are harvested in the fall), but orders are accepted at any time. Please contact Big Summit Beef to verify availability at bigsummitbeef@gmail.com.

2. Pay your deposit. Big Summit Beef requires a non-refundable deposit to hold your beef and the deposit goes toward your order total. We currently accept cash, local checks, and message us to ask about online payment options. 

3.  Choose you custom cuts.  Big Summit Beef reserves Custom and USDA processing appointments in advance for their customers. The processor will call you and ask for cut and wrap instructions to ensure your beef is processed to your specifications.  A representative from Big Summit Beef will be available at any time to answer your questions on how your beef will be processed and discuss what meat cuts best fit your needs.

4. Final payment is due to Big Summit Beef Co once your beef is delivered to the processor and the final hanging weight is determined.  

5. Pick up your beef! The processor will call you when your beef is ready for pick-up.  Big Summit Beef customers pay for processing (harvest, cut and wrap) fees when they arrive to pick-up their beef.

Processing your Beef Share

Buyer pays the harvest and cut and wrap fees. Please contact the Processor to inquire on processing fees and cut and wrap questions.
